DON THE BEACHCOMBER’S ORIGINAL MAI TAI

Circa 1932 - 1933

This robust-size rum drink is to be enjoyed well after the Kona Coffee Grog and throughout the evening. With full-flavored Jamaica rum, Don the Beachcomber guarantees that this hearty rum punch will provide comfort, warm your blood, and restore your strength.

Into a mixer pour:

1½ ounces Myer’s Plantation rum*

1 ounce Cuban rum*

¾ ounce fresh lime juice

1 ounce fresh grapefruit juice

¼ ounce Falernum**

½ ounce Cointreau

2 dashes Angostura bitters

1 dash Pernod

Shell of squeezed lime

1 cup of cracked ice (size of a dime)

Shake for 1 minute. Serve in a double old-fashioned glass. Garnish with four sprigs of mint. Add a spear of pineapple. Sip slowly through mint sprigs until desired effect results.

*Recommended rum substitutions:

1½ ounces Appleton Estate

1 ounce British Navy-style rum, such as Pusser’s or Lamb’s

** Use sugar syrup like Rock Candy Syrup
